Power Greens Salad

Sorry it's been a few days without a new post, life has been crazy this week! Just want to wish my husband John a happy birthday!!  Now onto the salad...I got this recipe from my mom's friend Alicia, thanks for sharing it with me! I love it, and have been making it as a side salad for at least a couple of meals a week.  It is quick and easy to make.  I just made a big batch for a family party we had last night.


Power Greens Salad with Lemon Vinaigrette:



Makes a large salad, which serves a side salad to 6-8 people. (Note: I usually half this recipe since I am feeding two for dinner normally and they do make small tubs of Super Greens)

Ingredients:
Dressing:
1/4 c. & 2 Tbsp olive oil
1 1/2 Tbsp honey
3 Tbsp apple cider vinegar (Bragg's brand is very delicious and good for you!)
1 1/2 Tbsp lemon juice (about 1/2 a lemon)
1 1/2 Tbsp dijon mustard
1 1/2 tsp salt
1 1/2 tsp pepper

Salad:
Power greens - I bought a big tub of "Super Greens" from the grocery store; you can also buy the greens separately (use a combination of mustard greens, rainbow chard, and kale, etc. to make the combination you prefer).
Red onion
About 1 c. Walnuts (mine are raw walnuts I soaked and dehydrated, but again use what you have!)

Directions:
1. Combine all dressing ingredients and whisk or shake to combine.
2. Thinly slice some red onion and throw power greens in your salad bowl, topped with red onion and walnuts.

3. Before serving, toss salad with dressing, add slowly to gauge how much you want on the salad.  I serve the salad with the extra dressing on the side in case someone wants more, but it doesn't need a whole lot.
