Roasted Sweet Potatoes

I love sweet potatoes! These roasted sweet potatoes are very easy to make and delicious! They make a great side dish for any meal, especially my Marinated Chicken.

Roasted Sweet Potatoes

Ingredients:
2-3 medium sweet potatoes
sprig of fresh rosemary
salt & pepper
2-3 Tbsp extra virgin olive oil

Directions:
1. Wash and dry sweet potatoes.  Cut sweet potatoes into 1" chunks and place on a cookie sheet.




2. Drizzle sweet potatoes with olive oil and sprinkle with salt and pepper.  Tear the leaves off of the rosemary sprig and sprinkle over the sweet potatoes.  Using your hands, toss the sweet potatoes in the olive oil and spices.  Arrange on the pan in a single layer.






3. Roast sweet potatoes in a 400 degree oven for 20-25 minutes or until fork tender.
