Bison Burgers and Grilled Asparagus

This recipe is super easy and very tasty without much effort!  Tonight we are having grilled Bison Burgers on Ezekiel Sandwich Buns with a side of grilled asparagus and a small side salad from my recipe: Power Greens Salad.  We have found bison burgers at our local health food store as well as the regular grocery store, both in the freezer section.  I highly recommend them, they are delicious! By the way, this was a quick and easy meal that created little mess and took under 30 minutes to make. Bison Burgers



Most of the frozen bison burgers come in packs of three (1 lb. package with three 1/3 lb burgers).  Take the burgers out and sprinkle with salt and pepper on both sides.  Cook on a grill heated to 450 degrees for six minutes on each side.  Try to only cook on each side one time, just leave them alone until you are ready to flip.  Once you are done cooking them, cover with foil and let them rest for a few minutes while you cook the asparagus. 

We served the burgers on Ezekiel sandwich buns with some mayonnaise, lettuce, and jalapenos, but they would also be good with the standard ketchup and mustard or whatever you like!

Grilled Asparagus



Ingredients:
1 bunch of asparagus
1-2 Tbsp olive oil
dash of sea salt
dash of freshly ground black pepper

Directions:
1. Wash and dry asparagus and cut off about 1-2 inches off the end.


2. Place asparagus on a plate or shallow bowl and drizzle olive oil over the asparagus.  Sprinkle with a little salt and pepper to taste. 

3. Using your hands, toss the asparagus in olive oil, salt, and pepper to get a good coating on all of them. 

4. Place asparagus on the grill - still at 450 degrees (place on grill in the opposite direction of grates so they don't fall through).  Turn the asparagus a few times as they cook.  You want the asparagus to be somewhat tender, but not flimsy and to have nice grill marks on them. It usually only takes about 5 minutes to cook them. That's it! Enjoy!
