Sesame Kale Salad

This recipe was adapted from the back of a bag of kale salad.  Kale is a superfood, with tons of vitamins and minerals your body needs! This salad is very quick to make and delicious!

Sesame Kale Salad
(serves 4)

1 - 8 oz. bag Kale
1 or 2 carrots, shredded
1/4 c. extra virgin olive oil
1/4 c. rice wine vinegar
1 T. sesame oil
1 1/2 tsp organic sugar (or other natural sweetener)
2 Tbsp toasted sesame seeds
1/4 tsp salt
1/2 tsp pepper

1. Mix together dressing ingredients: olive oil, vinegar, sesame oil, sugar, sesame seeds, salt, & pepper.  Whisk together.

2. Shred carrots and mix kale and carrots together.  Toss salad with dressing.

3. I recommend refrigerating the salad for about 20-30 minutes before serving so the salad can marinate.  Enjoy!
